Flavor and Character

This is wildflower honey from different islands across The Bahamas. We purchase it directly from a local beekeeper whenever we visit on vacation. Each trip may bring a slightly different island harvest, and when our supply is gone, it is gone until the next trip.

One characteristic we have noticed in our Bahamian wildflower batches is very fast crystallization. Some batches have begun crystallizing only two or three weeks after harvest. This appears to reflect the natural sugar balance created by the unique mix of island flowers. Crystallization is a normal process in raw honey and does not mean the honey has spoiled.
